Zucchini bread

 

 

1 cup vegetable oil

1 ½ cups granulated sugar

3 eggs

1 tsp vanilla

1 Tblsp grated orange rind

1 tsp salt

1 tsp baking soda

½ tsp baking powder

2 tsp cinnamon

Optional: ½ tsp cloves, ½ tsp nutmeg

3 cups flour

2 cups zucchini – grated

½ cup chopped nuts

½ cup raisins

 

 

Cream oil and sugar; add eggs and vanilla, orange rind.

Add next four dry ingredients, then flour.

Add zucchini, nuts and raisins.

 

BAKE:  350 degrees, 50 – 60 minutes

 

YIELD:  2 loaves or 1 bundt cake
