YAM & APPLE CASSAROLE

 

 

6 Yams, par boiled & peeled

6 tart apples, peeled

½ cup butter

2 cups water

3 Tblsp cornstarch

¼ tsp salt

1 cup brown sugar

 

Slice yams and apples ½ inch thick. Place alternate layers in casserole, starting with apples.

 

Boil water and butter. Mix sugars and cornstarch. Add a small amount of water to make a paste. Add paste to water and butter. Boil till thickened. Pour over yams and apples.

 

BAKE:  350 for 50 minutes
