TAMALE BAKE
1 ½ lb
hamburger
½ onion,
chopped
2 cloves
garlic
1 tsp salt
½ tsp
pepper
2 Tblsp chili powder
1 large
can tomatoes
1 small
can tomato paste
1 can kernel corn
liquid
from kernel corn
½ cup
cornmeal
1 can
pitted olives, chopped or sliced
1 can
kidney beans, drained
Brown meat with seasonings. Add tomatoes and corn. Mix cornmeal with corn juice, add
to meat. Add olives and beans. Simmer for 30-40 minutes. Pour into 3 quart
casserole.
TOPPING:
1 ½ cup milk
2 Tblsp
butter
½ tsp salt
½ cup
cornmeal
1 cup
grated cheese
2 eggs,
lightly beaten
Combine
milk, butter, salt and cornmeal in pan and heat on medium (or microwave)
stirring till thick, cool slightly. Add cheese and eggs. Pour over casserole.
BAKE: 350 degrees for 30 minutes
