SPONGE CAKE   (GENOISE)

 

 

3 whole eggs (room temperature)

Seeds from 1 vanilla bean

3/8 cup sugar

 

Beat at high speed in electric mixer till fluffy (10 minutes)

 

Add to beaten mixture by folding in:

             

1/2 cup white flour

1 Tblsp melted butter, unsalted

 

Pour into buttered and floured 8” round pan.

 

Bake:  350 degrees for 25 minutes.

 

 Cool 10 minutes, turn out on cooling rack.
