SNOWBALL MELTAWAYS
1 cup (2 cubes) butter
¼ cup sifted powdered sugar
1 tsp vanilla
2 ½ cups sifted flour
½ cups finely chopped pecans
More powdered sugar
In heavy saucepan, over low
heat, melt and heat butter until light brown in color. Pour into small mixing
bowl; chill until firm. Cream browned butter, sugar and vanilla until light and
fluffy. Gradually add flour. Chill. Shape into 1 inch balls.
BAKE: 325 degrees for 15 minutes. Roll in powdered
sugar while still hot. Cool on wire rack.
YIELD: 3 dozen
