SCALLOPS WITH BOK CHOY & HOISIN SAUCE
¾ cup fresh orange juice
2 Tblsp
hoisin sauce
2 tsp minced peeled fresh
ginger
10 large scallops
1 Tblsp coriander seeds,
coarsely crushed
2 tsp sesame oil
2 baby bok choy cut into
1/8ths lengthwise
2 Tblsp water
Combine, OJ, hoisin sauce,
ginger. Sprinkle seeds over top of dry scallops, pressing to adhere.
Heat oil in nonstick skillet—high heat
Add scallops, seed side down,
cook till opaque in center (1 ½ min per side)
Transfer scallops to plate
Add bok choy and 2 tblsp
water to pan
Sauté till wilted (2 min)
Plate bok choy, top with
scallops, add hoisin mixture to skillet. Boil till reduced to ¼ cup. Drizzle
sauce over bok choy and scallops.
