POACHED HALIBUT WITH ASPARAGUS SAUCE

 

 

Poach halibut in water and chopped leeks.  Drain on towel.  Serve with asparagus tips and sauce.

 

1 cup cream

1 cup asparagus puree

2 Tblsp. fish stocks

 

When sauce comes to boil, turn down heat and continue to stir.  Season to taste.  Reduce to desired consistency.
