SUGAR COOKIES (PATE SUCREE)

 

 

1 cup flour                                

1/2 cup sugar

1/8 tsp salt

6 Tblsp butter

1 egg

 

Mix in electric mixer on low speed as you would a pastry.  Add one egg and mix till mixture becomes a dough ball (pulls away from side of bowl.  Roll out thinly on floured pastry sheet; cut with cookie cutters.  Bake on ungreased cookie sheet:  325 degrees, 10 min.

May be used as pastry for pie also.

 

 

TART SHELL (PATE SUCREE)

 

1 cup flour

dash salt

1/4 cup vanilla sugar

3/4 cube cold unsalted butter (6 Tblsp)

1 egg

 

Mix in electric mixer on low speed as you would a pastry.  Add one egg and mix till mixture becomes a dough ball (pulls away from side of bowl).  Roll out 1/4” thick on floured pastry sheet to fit tart shell, either individual or one large; prick bottom. Place waxed paper inside shell and weight with dried beans.

BAKE:  375 degrees, 20 min., remove weights, cook 5 more minutes
