GRILLED STURGEON

Brush filet of fish with vinaigrette (oil, vinegar and herbs). Grill in cast iron pan with ridges to allow fat to cook off of fish. For smokey flavor, small twigs of grape vine prunings may be placed between ridges when pan is heating. Fat droplets will create the outdoor grill flavor.
