Coconut Pecan Frosting

 

1 1/3 cups evaporated milk (12 oz)

1 1/3 cups sugar

4 egg yolks

2/3 cup butter

1 ½ tsp vanilla

1 ½ to 2 cups flaked coconut

1 to 1 ½ cups chopped pecans

 

Combine milk, sugar, eggs and butter in pan over medium heat, stirring till thickened.

 

Add vanilla, coconut and pecans. Beat till cooled.

Frosts layer cake.

¾ tsp vanilla

1 cup flaked coconut

2/3 cup chopped pecans

 

Frosts 8 x 13 cake or 2 dozen cupcakes.
