CARROT BARS (from Marlene Berg)

 

 

4 eggs

2 cups sugar

1 ½ cups vegetable oil

3 small jars of baby food carrots (4 ½ oz)

2 ½ cups flour

2 tsp soda

1 tsp salt

2 tsp cinnamon

½ cup chopped nuts

 

Blend first 4 ingredients. Add dry ingredients. Pour into greased jelly roll pan (12 x 18)

 

BAKE:  350 degrees for 30-40 minutes. Cool and frost with cream cheese frosting (see below).

 

 

CREAM CHEESE FROSTING

 

8 oz cream cheese

½ cup butter (1 cube)

2 ½ - 3 cups powdered sugar

1 tsp vanilla

 

Blend till smooth and spread on cooled bars. Cut into serving size (2”). Keep in refrigerator. These also freeze well.
