CARAMEL

 

 

1 cup sugar

1/2 cup water

 

Cook in heavy-bottomed saucepan till water cooks out and sugar is golden brown.  No not stir.  Pour onto an oiled or buttered baking pan to cool.  Break in pieces and place in cuisinart to pulverize.  May be used in recipe calling for sugar to add special flavor. 

 

 

 

 

PRALINE

 

1/2 cup blanched almonds or other nuts, like pecans

1/2 cup sugar (powdered or superfine best)

 

Cook in heavy bottomed saucepan over high heat to melt sugar.  Stir slightly with wooden spoon so nuts will not clump together, but will coat evenly and turn golden brown.  Pour onto an oiled or buttered baking pan to cool.  Chop into pieces for use in recipes.
