BANANA CAKE

 

 

2/3 cup shortening

1 2/3 cups sugar

1 ¼ cup mashed fully ripe bananas

2/3 cup buttermilk or sour milk

2 eggs

2 ½ cups sifted cake flour

1 ¼ tsp baking powder

1 tsp baking soda

1 tsp salt

 

Cream shortening and sugar in mixing bowl. Sift together the flour, baking powder, soda and salt. Mash bananas in another bowl, add milk and eggs. Add dry ingredients alternately with banana mixture.

Pour into two greased and lightly floured 8” round pans.

 

BAKE:  350 degrees about 40 minutes or till done (toothpick comes out clean)

 

Cool for 10 minutes and remove from pan. When completely cooled, frost with creamy or fluffy frosting--one with cream cheese or whipped cream sounds good.

 

You may want to decorate frosted cake with chopped nuts or coconut.
