BANANA BREAD (Mrs. Nesmith’s)

 

 

1 cup shortening

2 cups sugar

4 eggs

3 ˝ cups flour

˝ tsp salt

2 tsp soda

4 ripe bananas, mashed

1 cup sour milk (buttermilk, e.g.)

 

Optional:

1 cup chopped walnuts

˝ cup coconut

 

Cream shortening and sugar. Add eggs. Add bananas. Combine salt, soda and flour.  Add alternately with milk.

Put into pans and cook immediately, otherwise soda will start to work and bread will not rise properly.

 

Add nuts or coconut for variety.

 

BAKE: 350 degrees, 1 hour

 

YIELD:  2 loaves or 1 bundt cake
